Matcha powder, like black and green tea, is a food variety derived from the Camellia sinensis plant. In fact, the product is grown under exactly the same conditions as standard tea. However, the leaves used to make matcha powder are covered and shaded 20 to 30 days before harvest. Thus, the chlorophyll level, phenolic components and amino acid ratio of the leaves are preserved at the maximum level. In the last step, the leaves are harvested and ground until they acquire a powdery appearance. Thus, matcha powder, which has a vegetable and pleasant aroma, is obtained.
